Does it have to be a city? Luxury hotel or small town/outdoor stuff?
Masham in N Yorkshire is nice, very mall, several great pubs, 2 wonderfull breweries.
lake district? Some nice boutique hotels there ( I like www.aphroditeslodge.co.uk/ ).
Stratford upon avon is nice too, so is Hay-on-wye (good pubs, bookshops and food).

Lots of nice hotels in here wherever you decide, personally I would go to the Lake District for a couple of days.
