If you can find one for the price, a VW Scirocco. Easy to work on and fairly entertaining to drive.

You might shop for a "mechanic's special" ie a car with a bad head gasket, worn/slipping clutch or similar, if you are mechanically inclined. Know what you are getting into though, don't get a neglected rusty hulk, but rather an otherwise decent car with a discrete mechanical problem (one you are prepared to deal with yourself) that the owner is not willing to pay to have fixed. (make damn sure you clearly understand the risks involved with this approach; or dont' try it...)

There's a 1.6 GT Scirocco in this months Retro carss for 800 quid. I've seen a couple more at that sort of price, I wouldn't have thought you'll have muuch trouble finding a decent one. If that counts as an "interesting" car?
I wish I'd bought one instead of my X1/9...

There's still some bargains out there in the UK, I reckon. But that situation won't last forever - over here AutoWeek (the Dutch AutoExpress) wrote that this is a case of 'buy now, or pay big money five years on' just a couple of weeks ago.

Add sports exhaust and Webber carb for 80bhp.

Or go the whole hog as follows-

Take out the 1.3 engine and ditch the wheels.
Add one fiat twin cam using an adaptor plate (flowtech used to make them)
Add 14 inch wheels with 185/55 front and 205/50s rear
Lower the front by two inches and the rear by one inches by fitting new springs.

Probably still possible to do this within your budget.
