Not sure if wives tales is the word, but the

Red in the morning, shepherds warning
Red at night, shepheards delight.

And if the cows are lying down in the field, (either they're tired or) its going to rain.

Any country bumpkins care to add to the list

This actually works (well more often than not).

The prevailing wind in this country is westerly and the sun rises in the East and sets to the West. So if you have a red sky in the morning then the sun is illuminating clouds to the west - suggesting the weather will worsen. If the sky is red in the evening then it suggests clearer skies to the west and a clear night.

Swine, I was about to post that!

Mary Whitehouse Experience, back when it was on Radio 1 at Midnight.

Dr Foster went to Gloucester
In a shower of rain
He stepped into a puddle
Right up to his middle
And said 'Why has this acid rain burned my legs off?'

"Mackerel skies and mares tails make ships carry lowered sails."

Mackerel sky is another name for of Cirrocumulus, often indicative of a change in the weather due to upper level atmospheric instability.

Swallows flying low=bad weather....

This is due to their food (bugs 'n that) being forced down atmospheric pressue (I think)

There are shed loads of these empirical observations, some are quite simple when you think about them.

I was on a train with an ex of mine a few years back - looking out the window into the fields and whilst nodding sagely I uttered "Must be raining out in them fields"

"Why's that?" she repied.

"The cows are wet"

Hence my return to singledom....

The colors we see in the sky are due to the rays of sunlight being split into colors of the spectrum as they pass through the atmosphere and ricochet off the water vapor and particles in the atmosphere. The amounts of water vapor and dust particles in the atmosphere are good indicators of weather conditions. They also determine which colors we will see in the sky.

During sunrise and sunset the sun is low in the sky, and it transmits light through the thickest part of the atmosphere. A red sky suggests an atmosphere loaded with dust and moisture particles. We see the red, because red wavelengths (the longest in the color spectrum) are breaking through the atmosphere. The shorter wavelengths, such as blue, are scattered and broken up.

Red sky at night, sailors delight.
When we see a red sky at night, this means that the setting sun is sending its light through a high concentration of dust particles. This usually indicates high pressure and stable air coming in from the west. Basically good weather will follow.

Red sky in morning, sailor’s warning.
A red sunrise reflects the dust particles of a system that has just passed from the west. This indicates that a storm system may be moving to the east. If the morning sky is a deep fiery red, it means a high water content in the atmosphere. So, rain is on its way.

Apparently Spotted horses are magical.
Though not as magical as the ones with horns or wings I presume!

Grey horses and horses with four white socks are unlucky.

Which is probably true as the guy who's car broke down in the rain and the dark would probably testify.....

...Driving down a country lane at night in the pouring rain, a mans car suddenly breaks down. "Bollards! That's all I need." He thinks to himself climbing out of the car to look under the bonnet. As he is gazing blankly at the silent engine before him, baffled as to why it should conk out, he hears the sound of breathing over his left shoulder.

Spinning around he comes face to face with a white horse. Before he could utter the words WTF, the horse, cool as a cucumber says to him in perfect English "You wana check the coil mate." and with that, turns around and clippetty clops off into the night.

Bemused & stunned, the man looks at the coil and notices a loose connection and sure enough after sorting it, the car starts again first time and off he goes.

Shocked and stunned the guy pulls over at the first pub and wanders straight over to the bar…”Large scotch please bar man” he declares, almost shacking.
“Certainly sir. Are you ok. You look like you’ve seen a ghost?” Asks the bar man.

“Well”, says the guy, “Funny you should say that, I broke down just 20 minutes ago just down the road there and this white horse appears out of nowhere & told me to check the coil! Sure enough I had a look and there was a loose connection. I sorted it and then the car was fine and here I am!”

“Ooooooow” says the bar man in a dark, menacing tone, “Your lucky it was the white horse that found you and not the black one!”. Visibly paler, the guys asks “w w why’s that then!?”

“Well, you see” Explains the bar man, “the black horse….. he knows F’*k all about cars!”
