copthorne hotel on the quayside is fairly secure but not as good as one would expect, malmaison further down the quayside (near the millenium eye bridge) is much better inside and also has good parking, otherwise I always stay in durham when I need to be in newcastle - much more stress free 
you could try the gosforth park marriott on the outskirts of newcastle (just off the A1) the parking is open air but it's patrolled and it's quite far from anywhere rough (about 2 miles from wideopen, and 3 from killingworth so you should be quite safe

I have a quiet street, it's a bit out of town mind
The problem you'll have is that the town will be very busy with so many people like yourself coming up, all the common c/p's will be very busy I'd presume.
The Gate (get in off Stowel Street / China Town) offers secure parking with security cameras & patrols but it's a bit pricey at £1/hr or so. NCP opposite the Gate is meant to be ok, although I've never parked in there. Claremont rd c/p is good and I regulary used to leave the Marlin up there, 60p/hr. There is a decent street on the far side of the Uni library at 40p/hr but it's often full up by 9am and only has 5hr parking limit.
As for streets, well, I can think of one or too but most are undesirable for a Tivver (big speed humps and the like)... There is one I know of where you can park with impunity, but it's behind Westgate Road so maybe not the best security wise. As you can imagine there isn't much free within easy reach of the town, and those that are, well I'm not sure I'd leave my car there.
Hotels - you have loads of choices from the Hilton (
), Copthorne (), Holiday Inn & Travel Lodge. The Holiday Inn is probably the best bet smack bang in the middle of town (about 10mins walk from Uni) and has secure parking as well, the Travel Lodge is next best (location wise for cheapies) although has pay-for parking. The C/T & Hilton will be fine for parking as well, although are a fair hike to Uni.

My mate Basil (who is quite a sage) was telling me about his neice, Corrie. Apparently, Corrie and `er american sister Rosemary(who lives in Oregano) went to Newcastle once. The place is full of Chives (posh chavs) who are often quite Arragont (sorry!)
