As a novice golfer, I'm trying to get some advice about moving on to a better set of clubs.
What differentiates a cheap starter set from a "proper" set of irons, woods, putter etc. and what should I be looking for to get the right set for me?
Obviously I'm setting myself up for some stick here but there's always such a variety of people at here at PH that there must be some good advice out there for me.

Go and talk to a club pro and try out half a dozen different sets, they will carry lots of demos you can try (get three or four different 8 irons and take them to the range). Personally i'd go for a mid-priced set of steel shafted irons with cavity backs (don't go for blades!). Going for highly priced irons is a mistake, the best thing you can spend your money on is a set of lessons from a good pro.
Another thing, if you find a set you really like it might be worth getting them tailored to you. If you're very tall or very short the length of the irons can be altered so the base of the club sits correctly at address.
Again, if you're a new golfer get some lessons it will make a big difference!

I had my Pings made to my measurements and I have no intention of ever changing them - fantastic clubs.
I have a set of custom fitted Pings too. This is the best thing have. (after lessons.)
There are a lot of makes which do custom fitting so I would book a session with a pro at a range who can let you use lots of different makes.
nice thought!must get home! Next time you play, try out your partners clubs (helps if your partners are regular golfers with variety of clubs/brands!). I feel it's never the same testing a club (unless driver/woods) in the range. You should get an idea of what types of clubs you prefer/ suits you in during these practise games. Everyone will have their preference i.e. callaways (large clubhead), ping (ugly looking head!) etc.., but you will never know until you try them out. And yes, Ping offers free fitting with all their clubs.
At a guess/recommendation, I suppose you cannot go wrong with Mizuno MX-17's. Highly recommended / praised by all the golfing journals. A top quality set of clubs which suits high-mid handicappers. [I am prob bias with the Mizuno brand since I use the MX-23 :-) ]
