Cooking Christmas dinner this year for me julie, mum, brother and niece.

Never done this before - any tips or websites with a run down of what to do when, where to put what etc.

There was a web site on the BBC breakfast news this morning something like roast rage but i cant find it anywhere. It had tips on all sorts of things but they best bit of advice I could you you would be to use goose fat to cook your roast potatoes in absolutely , you have to make sure the fat is smoking hot so the par-boiled potatoes sizzle when you put them into the fat.

cook the turkey/chicken the day before. Instructions on packet. Make sure its defosted propery first (overnight).

Make sure its cooked, ie no blood or pinkness when you cut into the chicken

Put cooking tray with a bit of oil in the oven 60 mins before wanting to eat
Turn oven on to 3/4 full
Cut up the spuds, boil them for 15 mins then put into oven into hot oil. Leave for 40 mis or until brown

cut and skin the brussles then boil for a bit (until soft ish but not too soft (15 mins perhaps)

Do the same with any other veg.

Stuffing, take out of packet, boil water mix, put into over for 20 mins.
Gravey boil water mix.

and thats about it.

eat and enjoy
