Does anyone know how long leftover hollandaise will keep in the fridge if I put it in a sealed jar?

Or any idea if it will freeze?

assuming you made it fresh, you're best off using it instantly then throwing the rest away!

I'm sure I read somewhere that dangerous bacteria grows more easily on hollandaise sauce than anywhere else.

I'd be careful.

It's an odd question this. I think the only way you're going to find out is by experimentation.

Suggest you make said jar of holland sauce....stick it in your fridge, check it every day for mould and let us know the result

I've always been told never to keep it. Use it when you make it, bin the rest.

Keep it for a week in a warm place, then gift-wrap it to Johnny Prescott.....
