Night out in Liverpool

OK, so wanting to take the ladyfriend out in Liverpool this evening. But as it's a Friday, I'm wanting to stay away from the idiots. I realise everywhere is going to be extremely packed, but I would like to go somewhere slightly less packed, where we can have a drink and perhap a dance.
Any ideas? Drinks prices not too important as we don't drink a whole lot - and will have been for something to eat and a couple of bottles of wine prior anyway.
Albert Dock is out - can't really dance and thats the other end of the idiot scale - those that will spend every last penny they have just been paid whilst looking down their nose at everyone else, imagining they are extremely important.
I've always done student nights in Liverpool in the past, but student places turn into grotty scally places on a Friday/Saturday.
