I was there last Christmas, it was wet but warm, no sign of snow, I believe its all a bit colder this year

Chains or not...i wouldn't go near that road if it was icy or snow covered
I think its unlikely you would see snow in Ronda.IMO.
As for the road up to Ronda from the coast,yes its a bit twisty,but very well surfaced and pretty wide.(great fun!)
I think you would be unlucky to see ice at that time of year in that area.
Granada area is indeed the place to go for winter if you want snow.

We are back over there this Christmas, I thought about driving over to the Sierra Nevada for a day up the ski lifts, anyone been.

Several times, not to difficult but can get very warm and slushy in the afternoons, man made snow near the bottom.Rae

Done skiing in the morning and sunbathing in the afternoon a few times in Feb.

Yes, the road up from the coast is a joy to drive. Except when the local chavs decide they are going to try to overtake you in really dangerous places like on blind curves with big drops on one side and double white lines all over the place. As far as Ronda goes, when you've been there once, there isn't much point in going back IMHO. Nothing much to do there.
There are some really impressive national parks near there though with some absolutely stunning scenery, and some great walking.
I live about 40kms away in Coín.
Its raining today but for the last couple of weeks its been clear skys and sunshine.
But a couple of the higher mountains that over look ronda had a bit of snow/ice on them last week in the mornings but once the sun comes up it soon clears it away.
In winter we usually get really cold nights but nice mild days.
