You can buy pistachios with shell removed, Cypressa do them amongst others.
Eat them, and then you will realise why they are better off bought with shells on.
Sometimes too much of a good thing removes the good from the thing.
Having to de-shell a pistachio, one at a time, limits how may you eat and builds up that expectation, which translates into a better taste experience.
Pistachios are only so damned nice because you can never easily get enough in your gob....

The worst thing for me was buying a pack of pistachio nuts while I was working in London, I'd rented a flat for the job I was on, but never figured a pistachio would come into the equation. I stupidly tried to crack open a closed pistachio, instead of simply thowing it away. My tooth broke. I was due for a meeting with the then Chancellor of the Exchequer, Gordon Brown and several people on the project I was Change Managing, and several people from the Bank of England. All were Director types. I had one day to fix my tooth, so I had to fly up to Edinburgh, get my tooth done, then fly back down for the meeting.
