A Sunday and Monday in London - what to do?

Hi all,
I'm taking the missus to London for a few days as a post-Valentines pressie. We getting in at lunchtime on Sunday 15th Feb, and leaving at around 4pm on the following Tuesday (17th). The idea is that I arrange a number of things for us to do whilst there, but central London is still a bit vague for me so I don't really have a clear idea of things to do. As such, your help may be invaluable.
Stuff I've already sorted include:
The hotel is all arranged.
I've booked tickets for Mamma Mia! on the Monday evening.
I've booked places for the Absolut Ice Bar on the Sunday evening.
Really I'm looking for other things to do in and around central London. We've done the Eye and a Thames river cruise on our last trip, so we won't want to do that again. I've thought about taking her to Gordan Ramsey at Claridges for their set lunch on the Monday, but someone I know has told me they had a bad experience there so I'm now unsure. Any good alternatives to Claridges, or should I give it a go anyway?
Any good recommendations on bars or pubs to visit on Sunday evening? I think we'll be making a bit of an evening of it, so good recommendations would be most welcome. The Absolut Ice Bar is on Mayfair (iirc) so places within walking/staggering distance of that would be ideal.
I know my missus has always fancied going to one of those Sushi bars where you sit next to a conveyor belt (!!) and grab what you like, but I've no idea if there are any decent ones in London. Any suggestions? (I can find loads of Sushi bars - I just don't know which are good and which aren't).
Anyway, any specific or general suggestions would be most welcome.

This makes a nice change from the 'London is a toilet', 'full of 
s', etc, etc normally posted in P&P.
Ice Bar is just off Regent St iirc. If you like Morroccan food there is a place called Momo next door.
Lots of resaurants are quiet on sunday evenings. If you have a look on www.toptable.co.uuk there are often 50% off offers.
One which won't be on offer but is very good is Nobu (Japanese). I always come out hungry, the Mrs loves it.
The Tate Modern on the South Bank is worth a look too on Sunday pm.
As for getting around, plenty of black cabs, buses or tube.

Yo Sushi or Wasabi if it has to be conveyor - I'd generally go for the latter. Both are chains (so quality can vary a bit from one to another) with plenty of branches. http://www.yosushi.com/http://www.wasabi.uk.com/Or there's a few more upmarket places but that'll generally be ordering from a menu.
. Nice food too - plus their cocktails are awesome (try the lychee one).I like GR Claridges alot, but I went on a Sat night don't know what lunch is like.
You might struggle to get in at short notice as well.
If you want a good lunch I'd suggest trying the Boxwood Cafe (also GR) or La Poule et Pot on Ebury street (one of the most romantic restraunts in London) - go for one of the set menu de Jour.
