Great Driving Roads of Ireland: Midlands

Following the success of the PHNI runout last weekend, I started thinking about running another a bit closer to home (I'm in Limerick)
Somewhere that's fairly central for everyone, Midlands perhaps, but with some good driving roads.

Does anyone know of any decent Midlands roads that would suit?
