Stereo upgrade for a dummy

I have a 2002 Subaru Impreza WRX with its original double din stereo. Is it as simple as buying a new double din stereo possibly apple carplay and plug and play? Or is there more work needed?

It is simple and most people could manage it.

ISO adapter loom and a fascia plate might be needed, easily available on ebay. If you get one with GPS DAB etc each of those will require an antenae cable routed behind some trims but again very easy to do.
