Any thoughts if there is anything I can do about these incredibly deep scratches on a touchscreen .

I have a Maserati Levante (I think it s a Chrysler touchscreen). I pootling along taking a metal fence post back to Wickes when the driver in front of me decided to slam on with no indicators and pulled into a driveway. I have to emergency stop sending the metal post straight into the touchscreen frown

The screen still works, there's a big gouge which has taken the top layer off the screen and there are some more minor scratches. Can anything be done?

Unlucky. No polishing or anything will help, looks like a replacement or you'll just have to live with it. You could try applying some kind of matte screen protector, that'd be cheap and might improve how it looks.

Put a glass screen protector over it and see how you get on.
