As stated, is it just Tomtom who use the .itn format for multipoint journeys?

I'm sure the funcationality exists on other devices though, so what do they use to transport this journey information from one device to another?

Garmin uses a .gpx format for multi waypoint routes. A small utility called ITNConv can convert between these and quite a few other formats.
