My mate and have both built Ultimas so when we spied these at Stoneleigh Kit Show we couldn't resist! The last time I did anything like this was over 20 years ago, so this could be interesting!
I will probably be on here asking stupid questions, especially about preparing and painting the body.

I need to get a motor, batteries speed controller and servos, Colin Bliss is only down the road to me so I guess I'll be a regular in there when I start.

You won't have a problem with the mardave kits, they are some of the most simple and basic kits in rc.
I first built an electric mardave and then a 1/8 scale nitro mardave over 30 years ago.
The most important option to choose wiill be the motor and speed control to suit it.
I would do for a brushless motor with combined esc.
I have used a lot of mamba motors and esc and they work well:-

Here is a very good budget option from mardave for a motor and esc.

little trick for mounting the tyres.
Use the double sided tyre tape and put on wheels.
Pull a corner away to the outside of the rim so it is visible when tyre installed.
Spray inside of tyres with brake cleaner.
Slide over double sided tape. The brake cleaner will stop it sticking to the visible adhesive corner, and slide easily over the rest of the tape.
When on and straight pull the double sided tape away, and leave for a few hours for the brake cleaner to evaporate.
if the tyre doesn't look straight you'll have a few minutes to line it up depending on how much brake cleaner was used.
After that you may wish to true the tyres down to a slimmer profile.
