I want to redye my whole interior as i am getting new carpets,there fore i want the car to look like it came out of the showroom.......Ive seen some of your guys results and am jealous.......What product do i go with? Do i need to send them some leather or can i just call them? If i have to send them leather can it be the button headrest as i dont want to cut any leather...I have the tendency to mess things up.....Also would it be easier to just let an interior place do it? Is it expensive for these cars?

Overall what should I do?

I'll do it for free as long as you pay for the plane ticket!
On a serious note, if you are doing the carpets yourself, then do the leather. The hard part is stripping and refitting your interior. If someone else is stripping out your interior then get them to do the leather.
Once you have your leather bits out, the only thing you need is a bit of patience. The two tricks are the cleaning of the old leather, make sure you get into all the cracks, and secondly the application. I used Gliptone and that came with it's own spraygun. The trick there is to use light coats as it's water based. Human nature will want you to try and fill in cracks, cover up bare patches and cover the damn thing. This will result in the leather grain dissappearing and runs all over the place. Follow my advise and you'll have results like mine if not better. Afterall, it was my first time and I had to find out the hard way.
