I want to take my girlfriend MTB for the day, she hasnt got a bike and my road bike wont do so we need to hire bikes from somewhere.

I live in Leeds so within say 50 miles, preferable scenic scenery.

And not to difficult as she hasnt ridden a bike for a while

Any sugguestions?

Plenty of good riding around Leeds, up around Ilkley for example. If you don't want to navigate and just follow a nice route then head to a trail centre. Dalby or Hamsterley Forest are both within reach of Leeds.

Old railway lines are an easy ride. You can hire bikes from the bike shop at Thorpe Arch and ride to Wetherby and onto Spofforth on the old railway path then return to Wetherby on bridleways.

However it isn't very challenging,
Dalby Forest near Pickering is nice, there are graded routes and the roads are quiet as it is a toll road (so it will cost £7 or £8 to get in. There a a couple of cafes and a visitor centre - I go there with my kids.

Cycle Adventure will rent you a MTB and deliver it to Gisburn Forest. The area looks nice and is popular but I've only ever ridden past on my road bike.
