My bike engine......

Afternoon cyclists!
I ride once a week, just upping this to twice a week and think of myself as not fit, but certainly not unfit.
Now, I have done to recent trips to Afan and Cwmcarn, 1 in March, and 1 last weekend. Both times after the first day of riding I suffered from dehyrdation symptoms - thick, hangover style headache, dull aching all over and lethargy / feverishness. Both occassions, after a good night's rest, good breakfast etc I felt great on day 2. At no point on any of the rides am I the weakest group rider, nor feeling like I need to stop.
In March, we did W2 (around 45k), but last weekend we only did Whytes trail (half of W2), AND I used SiS Go Hydro tabs in my fluids, and had a good 2-3 litres before / during and after the ride.
On the Sunday we covered similar distance (a couple of laps of the Twyrch trail with a break in the middle) and I could have kept riding.
We did have rubbish food on Saturday before the ride, could this be my downfall? I was forced (read, nowehere else nearby) to eat fast food - something I don't do very often (twice a year max).
Any insight would be really great, I have got fairly invigorated with my riding again in the last year, and treated myself to a new ride 2 weeks ago, and want to try and see some real improvements with some targeted training over the autumn and winter!

It's a little hard to follow, but I'm reading that after a day riding around Afan / CC you're feeling a little tired mentally and phiscially with a slight headache, but after a good nights sleep you're ok again?
I see you really concentrate on hydration, are you keeping your sugar level up?

Sorry, didn't read it back! What I am struggling with, is after a day riding further and harder than normal I seem to come down and and crash, yet day 2 I seem to be ok. What has thrown me even more is that a month ago we did 45k and I felt rough, yet last weekend we did half the distance, I used the hydration powders and took more fluid on, but still felt rubbish.
I never suffer riding locally, and it does FEEL like dehydration - just don't want it to encroach on my riding as it's starting to play on my mind now.
Thanks!
