Recommendations please - cycling holiday in May

Your thoughts requested. For my birthday in year I fancy taking Eddh, our respective bikes and our respective partners (in that order) into the car and heading off for some sunshine and cycling. In particular, I'd like to climb some big pointy things, just because I've never climbed more than 1000ft before and I'd like to give it a crack.
Where would you recommend for a good balance of sunshine, affordability, things for the girls to do, tasty food, and mountains which aren't still snowy in May?
I was thinking about trying to do Ventoux, because I've heard of it... but I'm told that May might still be too early for that?

Another recommendation for Mallorca here. I'd suggest staying in the north somewhere, as that is where the Mountains are. I went in May this year, and rode on 2 mornings. We stayed in Porto Pollenca, and I rode to Sa Calobra one morning, and up to Cap de Formentor the second day. Stunning scenery, and generally good condition roads. I hired a Wilier GTR from the bike shop attached to my hotel, for about 20€ a day.
We had a fantastic week in Bourg d'Oisans. It's a great little town for cycling. There are lots of famous climbs nearby (l'alpe d'huez, galibier etc) plus some nice little restaurants, and a bike shop if you need any spares. Not sure how much snow would still be around in May though, we went in July.

Canaries sound like the best option then. I've had a look at AirBnB in Pollenca and they seem very reasonable. Thanks chaps.

If you decide on Majorca then consider staying at the Hotel Club Pollentia. It's a great hotel and it also has a massive bike hire centre with a full workshop. Think it depends on the winter. But in 2013 in May anything above 1400m was snowy. Some pics here, it's incredible up there though
For somewhere a bit more 'driveable' you could do worse than looking around lake Como in Italy and lake Lugano in Switzerland. Great roads, lots of tough but achievable climbs, fantastic food and amazing scenery so it should be enjoyable for the non-cyclist members of the group too.
The weather should be good at that time of year, and as long as you're not trying to climb the Gothard pass or anything equally silly you shouldn't have snow issues either.
