There are public swimming pools in La Oliva and Puerto although I wouldn't have thought you would want to stay in Puerto itself. There are a few options in La Oliva / Villaverde which would put you pretty close to the pool in La Oliva. There are four routes out of La Oliva too so you can mix up your routes somewhat along with some smaller hills nearby. The base of the larger ones in the south are around 12-15 miles away.
There is a lot of British tourism in Corralejo but personally for cycling I don't think it's ideal, you only have two routes out both of which I don't like much due to width / traffic / security. You will also have a headwind all your way home which you may or may not like!
There seems to be a lot of cyclists staying in the resorts around Las Playitas in the south which I think try and market themselves as a Triathlon centre so one would imagine have facilities for swimming. In terms of the cycling from there once you get out the resort and away from the main road you have quite a few choices on quieter roads plus you are closer to the Betancuria mountain ranges if you want to go take in some hills.
You could always swim in the sea too, there are quite a few different protected spots which should be suitable for swimming in.

I did some riding from corralejo at the end of last year. It's not ideally situated, but there's plenty of good accommodation.
Ideally you'd be somewhere in the middle of the island, but I made it work even if there was a bit of "out and back" going on. The coast road has an excellent road surface and is flat, and although it's quite busy, it's wide with wide hard shoulders and the general standard of driving is very good. You can use that to head down the island to get up into the volcanic hills.
Make sure you hit the FV-30 at some point. Best climb on the island!
Only thing to beware of is the wind. It blows from the northeast usually, so you have a hard ride home if you're in the north.

Above comments spot on of course - broadly recommend MTB in the north (and all over really) and road more in the middle/south.
50m pools in Corralejo (Pappagayo resort - virtually unused) and also in Playitas.
Las Playitas hires Cervelos of all types at reasonable rates as well as MTBs. Standard of accommodation was high and I would go back there without hesitation if you like the all inclusive sports thing.
Oh, and it hadn't even occurred to me but there are Enduro schools out there that will hire you all the gear and the location is awesome for that IMO.
