Ignoring the £960 PRO EVO (tad out of budget - unless you guys can convince me it's realllly worth the extra £ ), is the £680 EXPERT worth the extra £££ over the COMP OR SPORT?
If it's worth spending a tad more to get better gears / forks etc... ?

The 650b Expert EVO has more travel, better brakes and a better drivetrain than the ones below it. It also seems like they've done something to the frame (the EVO bit) although whether you'd notice the difference or not is probably marginal.
Depends what you want it for. Pottering down canal paths? Buy the cheap one (or don't buy a Specialized). Throwing yourself down Red trails? Buy the one with better forks and brakes (or don't buy a Specialized).

Can't get exited about any of them, Coil or Suntour forks, Tektro brakes and SRAM.

I wouldn't worry about the top model, I'm not sure on the rest of the bike but the fork is a bag of bolts and mostly useless. The Reba on that Cube posted above is far superior and the whole bike is less money.
Like others have said, if you are fixed on a Specialized, just go with the one you suggested, however you'll do better in every way by looking at the likes of Cube or Whyte.

Good point. I mean, sooner or later people will be slapping exotic-sounding Italian names on open-mould carbon frames and whacking them out for 3x the price of someone else. When will it end?!
The price for that particular mould may be justified by a better layup though... not that anyone has ever been able to find the definitive answer either way. I had two specialized mtbs and loved them both. Im just not convinced they represent the best value for money compared to the opposition.
