What size tyres are you running and what gearing?

The reason I ask is I want a new bike and can't decide whether to stick with 25c or get something with more clearance,gravel type clearance of around 40.
I am on my own all week and now have loads of time to do what I want,including wizzing down to the mountains for a few days per week.I have a mountain bike but Mrs S doesn't like me going out on my own so it will be strictly road use only.

I'm running 38s at about 50psi on the road.
Really comfortable and don't feel any slower than when I tried a set of 28c Schwalbe Duranos.

Being an unfit fat bloke it makes it a lot easier. I also suffer from dodgy knees and grinding a low gear hurts on a long climb. Plus its nicer to have more choice of gears when they are needed the most.I live between the north and south downs and usually seem to head south to the coast so there are a few hills around whichever way i go.
My ideal ride out is 2 or 3 hours min at a leisurely pace rather than trying to break any land speed records.
40 will be bloody wide TBH, Im going to fit 32c Vittoria Randomeurs to my steel bike through winter, ive found thats as wide as I need and can handle any type of terrain, bar thick mud

Ive got 23c and 34/50 and 12-25 Its a crap combo , bar a nice a tight cassette for small increment changes. Going to change it for a 36/52 or a 39/52 and a 11-28 or thereabouts, not a fan of compacts through summer.
Commuter Cinelli:
just upgraded from 23c Schlabe to 25c 4 seasons, 23 was too narrow for commuting and this time of year, 4 seasons are ace. Bike runs 36/52 and a 11-30 cassette at back, Dont really need the 30 but it came with the bike and is handy to have. Really like the semi compact 36-52

It had 25c 4 seasons, just put some 35c trail tyres on, but the tread fouls on the calipers a bit and they are crap tyres. Going to put some 32cs so I can commute down a gravel track to work through the winter. Bike runs 34/50 with 12/30 on the back. I use the 34/30 quite a bit when pulling my daughter, her peppa pig collection of cuddly toys and a weeks worth of shopping up a gravel hill!!!

36/52 on the front
12-28 on the back, but I do have a 12-30 that I will get round to fitting sometime. Above 15% or so, a regular if short-lived occurrence around here, my cadence is down into the high 40s which is grindy.
If I was in your shoes I'd probably go 28, just for the extra compliance.

50/34 and 11-28 10spd on 700/23, attached to an Aluminium frame with Carbon forks.
The frame is a bit flexible, (looking at the bottom bracket when on a turbo.) There is a bit of a hole in the rear cassette too so I can see why an 11spd would be a better choice.
The next bike will most likely 52/36 and 11-28 11spd on 700/25, attached to a good quality Carbon frame. I'm hoping the stiffer frame, lighter weight and more training should see that difference of slightly longer gearing negated.
