£500 road wheel set recommendation

I'm looking to buy some modern wheels to go on the old 80s steel racer I'm restoring* and need to add some non-disc brake wheels that are 11 speed SRAM compatible. I'm not looking for anything particularly aero, just fairly light. I'd buy something like a Zip 303 if I had that sort of money but I won't for a while with the other bits I'm intending to add. So I'm expecting something alloy but open to suggestions.

• I'm restoring the frame with period decals etc but decided to go with a very modern groupset. Hopefully SRAM Red eTap as it'll only require brake cables and be very neat. I'd considered putting it back to what I thought was the original spec with 8 speed Dura-Ace 7400 8 speed but it turns out I needed a lot more (hard to find / expensive) parts than I thought as it was originally the 6 speed version with downtube shifters. I'm not sure at the moment whether I'll keep the downtube shifter bosses and cable guides in place so it could be put back to original. It depends whether the widening (that it has already received) at the rear could be reversed.

Sounds like a nice pair of handbuilt wheels using traditional looking components would work well here?

Those are most excellent suggestions. I'd not even considered stuff like that as I'd assumed they'd all be silly money. I like the idea of a silver wheel as it will fit with the frame, although the crank is going to stand out a mile as being modern unless SRAM release a silver version.
