Any tips? I have booked flights a car and a cheap apartment and friended a load of leaderboard strava riders to see where they ride and get some gpx's of routes.

Go and see Free Motion Cycles in Gran Canaria. I hired my road bike from them while I was out there in August and they couldn't have been more helpful. They have an extremely slick operation and cater for roadies and the hairy leg brigade in equal measures. They have a bunch of maps available and some GPX files you can download, they also do guided tours and an uplift service.

Drop them a line before you go out there, they were really responsive and great to deal with when I used them.

MTB-ing out there looks fantastic but bring your body armor, the landscape off road is extremely rugged and being volcanic quite unforgiving if you come off...... I'm sure you'll have a blast!

I stayed in Playa del Ingles which was an ideal base for a roadie as 5 mins inland you hit the bottom of the mountains - then just kept climbing for 2 or 3 hours! MTB trails seem to criss-cross the entire landscape so I'm fairly sure you'll be spoiled for choice!
