Riding in Spain

Going to visit the in-laws late July / early August for 2 weeks in Salamanca region (Salamanca and Bejar) of Spain. One option we are considering is driving down via eurotunnel which would mean i could take a bike with me in the car. I'd be returning alone as wife staying for a few weeks so could even maybe have a days riding in France too.
Has anyone ridden these areas before or can point me in the direction of any websites that have trail centre or route info? I'm hesitant to just head out and explore simply because ive no idea of the areas and maybe i'll miss the decent places to ride or simply never return.
Or shall i take my road bike instead?
