New bike suggestions!

Right another reccomend me a road bike thread!
My history is a cannondale six13 and currently a giant propel, i am a fair weather rider that likes to do 30-40 milers as fast as possible a few times a week with the odd 80 miler.
I liked the lightweight six13 which was sub 7kg and only got rid as the frame was too big and then went to the propel which is noticeably heavier although probably faster on the flats whereas the cannondale was better for climbing.
I would like something that combines the best of both worlds, the cannondale had Ultegra whereas the giant just has 105 which is fine but certainly preffered the Ultegra.
Im by no means an expert i generally get round a flattish 40 mile course at 18mph on both bikes but the cannondale was noticeably more comfortabe and better on hills and i would like to improve on overall average speed and also have the option to do some climbing and longer rides.
I realise im probably talking a lot of waffle So to summarise i want a light fast bike that has the comfort of an endurance but the speed of something racy like the propel.
At least Ultegra and size medium (im 5.10”), always buy used currently budgeting circa £1000 adjusted either way if needed so maybe something a few years old that was much more expensive new and now fits in that bracket but not too old >2014 ish
I have done a bit of research but am finding online reviews are very biased so would like some real world feedback.
A few that i have looked at are things like cannondale supersix and trek madone but very clueless as to specific models and open to all brand and model recommendations!

Once you try a supersix it takes a lot of money to get better imo. New shimano 105 is perfectly useable and unless comparing back to back dificult to tell the different between 6800 ultegra. R8000 ultegra is an upgrade, its far closer to dura ace with a little weight penalty than 105.
I purchased a 2017 supersix 105 for a little over your budget brand new. Think it was £1190.
Fit a nice set of light wheels and its the perfect bike.

The ten year old cannondale ultegra gears felt like new as obviously does the propel 2016 105 so thats all i personally have to go on. Nothing between them.
i guess because iv only have two bikes to compare ten years apart ages wise its just about the longevity concern with the 105 and will it age as well as ultegra as it was clear the quality of the ultegra was superior so thats why my train of thought has gone towards ultegra but its not a deal breaker, like you say newish 105 is also very good.
Id still rather have a 4 year old £1000 bike thats already been “specced” than a new £1000 bike that could do with upgrades (wheels etc)... but thats just me im all about value for money and resale over having the latest kit.

If you take tbe supersix frame for reference. The difference between 2017 and 2013 is huge. The 2017 evo is a last season hi mod in terms of geometry and frame spec (not compsite material) so a bottom spec 2017 supersix frame rides better than a high spec 2013-15 hi mod. The difference in weight is around 100g.
