Watched this last week. The guy with his dog is an absolute machine given the weight he must be carrying.

The scenery and expanse is something else too. This is definitely on my to do list, although I won’t be racing it

His kit seems to pack down to virtually nothing. Back in the day when I did this sort of thing we'd have had a pair of paniers on both the front and back wheels, plus kit bungied on top of the rear carrier and sometimes on the front one too. That was for three seasons UK camping sharing a two man tent.
