Ideally HG Splined cassette. Not bothered on actual disc brakes included as Id probably go flat bar anyway.

Looking for sale stock and it feels like an impossible search <£300 to get crank included also?

Most 'road' groupsets come with brake levers for drop bars, but they're not always disc brake, some of the cheaper ones still have the old caliper brakes but the brake levers won't fit flat bars.
I think you might be better looking at one of the entry level MTB sets, eg Shimano altus.

Shimano Essa is an 8 speed 1x groupset.

There is also Cues which is 9/10/11 speed but is actually just 11 speed with cogs missing.

Aliexpress. I got a full 105 12 spd mechanical groupset for just over £300 in July. It's currently at £315 if you get lucky and avoid any duty which going off my experience recently seems likely. Anrancee have a decent reputation.
