Which bits for my bike?

I've recently started cycling 15-20 miles 3-4 times a week and think my old bike is in need of a bit of tlc so was hoping someone might be able to point me in the right direction with regards to what to buy. It's a 10 year old GT Pantera.
The brakes a knackered so I fancy a set of Magura hydraulic rim brakes secondhand from ebay.
The gear selectors are also broken and are integrated with the brake levers, so would need replacing to go with the brakes anyway. However I can't seem to find any sti selectors for a 7 speed rear chainset and derailleur. Do I need to change this to an 8/9 speed too?
Any pointers or good online shops would be really helpful as I'm a bit stuck at the moment.

Magura's are very good, still very popular with the trials lads and last for years (I've got a 94 set on my mountain bike and a 95 set on my trials bike that have never been serviced!). You can get new HS33's for £120 ish and they're worth the cash. I thought the standard brake pads were a bit crap, although I've got very soft trials ones which are very grabby, I may put the standards ones back on the front of my mtb.
