fitted by the LBS are still very noisy even tho' the gear changes are fine yet when I tried out some new bikes at the Cycle Show today, they were all silent.

Am I expecting too much?

did they degrease the new chain and then oil it? as all chains come greased from the box.

not enough info, can't you tell where the noise is coming from?
should be quiet
somtimes it is possible to wrongly route the chain through the derailleur, gears will work ok but sound terrible - if thats the case you want your money back!

your chain could also be too short.
the tension (fore/aft) in the derailleur may also be wrong causing the upper jockey wheel to ride on the casssette...
