Routes around Manchester

Could anybody please suggest some decent on or off-road routes around Manchester?
I have a mate over for the World series at the Velodrome this weekend and I'm getting rather immune to the 'thrills' of the Fallowfield loop or Transpenine trail for a saturday training ride.
Last time we went out in the Peaks followed by Warrington/Cheshire the next day on road bikes but it was so busy it wasn't particularly sociable riding. I did think about just getting on hardtails and heading West on the Transpenine trail (I live next to it!) but I'd love to know if there are any more interesting/scenic alternatives not too far away.

May be a case of a 'bit more of the same' but I like a figure of 8 I do when visiting my folks in Bolton.
Belmont Village being the joining point of the figue of 8.
Top half of the 8 being - over Darwin moor (Darwin Tower) and back through Tocholes woods.. its marked as footpath on O/S map but is actually permissive bridleway on the ground.
Then a loop through the Rivington 'Gardens' (Rivington Tower) and up over Winter Hill (Transmission mast)
I add as many extra climbs and downhills as I feel like to make a nice morning out. Great for hartails, but some of the eroded cobble tracks can shake your fillings out!
Otherwise - Forest of Bowland is pretty

I can highly recommend the taster sessions at the Velodrome btw for around £20 you get a coach and track bike and an hour of track time racing your mates at the nations premier cycling venue. Great value and fun - like pedaling the indy 500!
