I have a 2010 Trek 9.8 which has Shimano M775 XT brakes. The problem I have is that whenever it is wet, which is quite a bit at the moment they squeal whenever I brake. They aren't contaminated so was wondering if changing the pads for a different pad/compound would help and if so has anyone tried any others over and above the standard Shimano ones?

Give the Allen Bolts a check, and get out and get the discs and pads filthy muddy on a good wet weather ride to bed the discs in.

The pads are possibly incorrectly aligned to the disc. Check that the disc runs perfectly true through the centre of the caliper. You can also take the pads out and give them a quick rub on some sandpaper. They might have got contaminated with oil at some point.
