I have Deore hubs on the mountain bike, and after 12 months of fun, the front wheel is moving (wobbling) a bit too much for comfort. Back wheel on its way out as well.
Can these hubs be 'fixed' as in, can the bearings be replaced, (or cleaned and re-greased,) Or it is a case of new hubs...

Yes, yes they can. They are simple cup and cone which needs more maintenance than a sealed cartridge bearing system, however they do last longer overall if maintained.
Drop it into the LBS and they'll likely charge you £15 or so, or you could learn how to do it yourself with a couple of cone spanners and some new bearings from the LBS and save yourself loads.

If I remember rightly you'll need a 13 or 14mm mm spanner (often they come in dual sizes) and a 17mm spanner for the lock nut.Sounds like some DIY is in order!

It's really childs play to work out how to do it. I'm sure the Park tools maintenance site has how to do it, or at the very least the Sheldon Brown site (RIP).
