in short, different standards. they are designed to wthstand different sorts of impact. most trackday companies have specific rules, some allow them, others do not, check with the organiser.
yes you can use an open face but only in closed roof cars and yo wont be able to get any passenger rides in an open top car with a open face helmet, they make communication in a tin top easier though.

Depends how much you want to spend. For budget look at Hedtec and V2 Sport. Hedtec can be bought at MSE days I think, but V2s are on line only.
However fit is incredibly important, so if you can, head to somewhere you can try on. I've always used GPR at Silverstone (Chiswick is now closed) but MSAR down in Croydon also allow you to visit their premises. Don't know anyone else I'm afraid.
