You can't 'just turn up' except at the 'Ring on a Tourist day.
You'll need to book yourself onto an event and pay up-front. The choice of provider may simply be down to which one has the track day at the circuit/date you want.
Don't worry about being too slow or getting in people's way - if you move to the right on the straights when you see someone faster approaching then you'll be fine.
I'd recommend Bookatrack myself, but there are a fair few other TDOs (track day organisers).
I'd also recommend you try a novice/taster day first, and take advantage of any free instruction offered.

Go to the ATDO website to see the list of accredited track day organisers - helps with insurance - and then checkout the organiser website for dates.
You will need a helmet, and your car will have to pass exhsaust noise test. Thats about it for getting in. Lots of other practical stuff do/check before the day like tyres, brakes etc.
