After a recent car/hedge interaction, I feel that learning the cars limits in a safe environment would be a good investment!

There is carlimits.com near North Weald.
I have been in my Tuscan and it was very good. I learned a lot and preferred it to a track day for the very reason you mention. I was not wanting to go as fast as possible round a track but instead get a better handle of dealing with problems.
Firstly we were made to take a specific turn faster and faster till we ran out of ability and when the smoke cleared :P we would go through the various problems and iron them out, up the speed... new problem and repeat.
Then all sorts of braking, understeer and oversteer exercises etc. It isn't kind on tyres mind you, but great fun! :P I got my braking technique ( no ABS of course ) from 60mph + down by about 20 - 40 m. Clutch in at the last minute to prevent the rears from locking, get a good shove on early and then ease up rather than the other way round etc.
I went in thinking I knew a little bit but came away knowing a fair but more but also seriously aware of how quickly things can go wrong in a car like mine and you need to be seriously awake to save it in some cases etc.

It's hilarious, trying to catch an Elise at >80mph with it trying to get away from you. High rearward CoG + softish suspension...
