I am sure this will have come up before but can anyone please advise if there are any insurance companies providing track day cover on a pay as you go or one off basis? If so what are the main considerations and limitations?

You've got Competition Car Insurance or MORIS - both will do one off event cover, or multiple event policies (good discounts if you're going to do more than one).

Excess is usually 10% of the covered amount, and you can either get cover for the whole car's value, or cover without engine & transmission (about half the price).

Yep me too...£400 for my M3 including modifications declared for fully comp road cover including 4 track days.
