Insurance for trackday car

Couple of questions (I know google would help, but want personal recomendations if poss).
I've been offered a good E36 323 coupe for next to nothing and we're thinking of turning it into a credit crunch busting track car - only thing holding me back at the moment is the cost of insurance as it will need to be road legal (at least initially). Problem is that the insurers I have spoken to either want it un-modded (£400) or put a cage and harnesses in (£350). The plan is a halfway house so stripped out but no cage and no engine mods just yet, just cosmetics and suspension/brakes. All quotes for these mods seem to be c£800.
Any thoughts/recomendations? Do I just insure as standard and leave it alone? Does anyone know an insurer who won't double the insurance just because I plan on making it lighter?
