There is a law for the minimum amount of holiday employers give employees, but is there a law for taking holiday? Are you required by law to actually take so many days holiday per year?

I have been hunting for the answer to this, but can only find the amount of holiday I should get.

You must take 28 days paid (full time).

How they are made up depends on your contract of employment. You have no legal right to take bank holidays as they fall.

Indeed, depending how contract is written, there may be no entitlement the extra jubilee day.

There are quite often rules in financial institutions that you must take two weeks in one go, this is so that if you're covering something up it becomes uncovered.
