Overwhelmed and over worked. Career change?

Hi, wondering if any one has any advice? My situation seems to be getting worse and it may wreck my health.
I work on a farm. We sell meat products from our animals. I'm basically dogs body, help them, do that etc. Or I was
It was only ever meant to be temporary and it still is really. It's my uni mates parents farm.
I went off sick in October and was in hospital and in was off for 3 months. It turns out I have chrons disease. Basically I am now back at work. Our butcher left us. This has pretty much left me in charge of the new butcher and butchers boy. My responsibilities are much higher because i know more and im the most intelligent there. Which is fine except i have no power. I can't tell people what to do. People I work with don't pull their weight.
I'm always being asked to do this that and the other. Or not told and expected I mind read.
The boss is Ill with cancer and hasn't much time left. They've never really told me what I'm to do since I've been back. They basically expect a lot from me and pay me f
k all. It's causing me stress and I'm not coping. Being ill and uncertain is not helping.
Organisation is the key. I try to get lists up. But I'm the only one who works off them. I always plan my days work and then they disorganise me and get annoyed I haven't done stuff. I got told today that I'm not like I used to be... That the doctor should check me over. I've worked so hard over the last few weeks and feel humiliated.
It's expected of me to get more business too. But it's been slow and I never get a chance. We're all disorganised so other staff just seem to do the minimum while I'm meant to have done everything else...
Im staying for loyalty but wondering why? Finding another job will be hard especially as they will probably be dicks with my reference. What I need is a carear.
I thought about getting a pgce, applied for this this academic year but was too late and the tuition fees are massive.
Basically I just want to start over as if I was 18 again (I'm 28) but I just don't know what career to explore. To get a trade, train in acountancy, engineering
I know the answers to this tbh. Just need to vent but any advice on how to run small family business, or to how to wrangle some authority off them... Ta all.

I would actually seriously consider the PGCE. Not sure how long this takes but if you already have a degree is it not just a year or two?
As for the fees, if you are eligible for standard student loans then maybe consider that, the debt sounds like a lot but you only have to start paying it back if you earn over a certain amount. I'd rather do that in a job that I like than be constantly miserable in something I hate.
I would probably be inclined to sack off accountancy and engineering - Both require a lot of time and investment before you can get to a stage where you can a) earn a decent living and b) land a job that you really like. Also, you will be competing with grads that are much younger.
Teaching you can go into at any stage of life, and while it's not for everyone it can be quite rewarding and relatively secure.
By the way I'm not a teacher!
