My GF has been taking on extra responsibilities at work for the last 2 years.

For this whole period she has been paid an extra amount per hour for any time she has carried out these duties.

This higher hourly rate was agreed by her line management subsequent to the commencement of these duties, and was back paid to the date the duties commenced.

The higher hourly rate is not written into her employment contract.

Does the higher hourly rate effectively become an implied contract term ( or any other such term) by virtue of the fact that that have paid it over a long period of time?

Yes it does. Obviously nice to have it confirmed in writing in some way but not necessary.

Is there any correspondence whether email or letter to document this? This would help in the case of any dispute. Or perhaps it is clearly traceable via payslips?

There are time sheets filled out detailing hours worked and at what rate. I'm assuming these get kept, so there should be a record.

Doesn't look like it's going to be a problem now, but it's better to be armed with the facts, just in case.
