I'm considering working for a small company where the benefits (pension etc.) aren't the best, but I know they want to grow the company considerably and I suspect that at some point they will have to bring their benefits in line with their competitors.

If I was to join and the pension was 5% for example, and they later increased it to 10%, would I be eligible for the increased pension or could they say it only applies to new hires?

They could make whatever changes they wished for the future but not for the past.

They can say it's just for new hires. it's completely legal to have different pay and benefits for individuals as long as it doesn't breach equality laws.
