Scunnered with what direction to go in after redundancy...

Hi All,
I assume this has probably been done over and over again but I’m just looking for some ideas/suggestion/advice on what direction to take my career after being made redundant.
Firstly, a bit of background about myself:
-Mid 20s
-Time Served Mech/Aero fitter/engineer
-Mechanical/aeronautical engineering apprenticeship from school, straight into earning 50k+ yearly after time served (incredibly lucky and fortunate).
-Still live at home with my parents.
-Long term partner of 7 years
-Was in process of buying a house prior to redundancy which therefore forces us to pull out.
-No real ideas/desire of what industry/career i’d like to pursue...
So... taking myself back to tail end of last year, the company I worked for had just given our factory/facility new work that would last us a lifetime. Music to my ears so me and my girlfriend started looking for a property so we could both move out of our parents homes. March hits and there’s talk of due to covid and air travel reducing that the company may use this opportunity to send the work overseas and shut down the facility I worked at. Few months later it was confirmed and redundancy processes started being talked about. July I left on voluntary redundancy.
I walked straight into another job the day after albeit minimum wage and not a job I’d have picked, however, it paid the bills and I couldn’t afford to be picky.
Now, after job hunting for the last 4+ months I’m getting fed up and have realised that in terms of salary and pay I’m going to have an incredible struggle to find anything paying anywhere near what I was on.
I’m now thinking about changing my career path completely however have no idea where to go or what to do. What I do know is that I DONT want to be in cloud engineering... I was given an opportunity to do networking (specifically in the cloud) and after doing some courses online I realised that it just wasn’t for me. I also don’t want to have to go to university and gain a degree.
What I do know is that I’m happy to start initially on a low salary as long as I can see progression in 5-10 years that would bring me close to if not more than I had been earning. I want to be able to provide not only a good, comfortable life for me and my partner but also for future children that we may have. Shift working doesn’t bother me and neither does working away from home/travel.
I also like the idea of gaining experience/becoming a subject matter expert in something and eventually starting my own business.
I realise what I’ve said is quite vague in terms of detail and the advice that can be given based on that will itself, be quite vague. However, anything would be greatly appreciated.
