Subject access request against former employer
Discussion
As above submitted a SAR 3 months and 10 days ago ad finally got a response of one solitary document relating to a single meeting.
I’m of the opinion my employer is hiding something or wishes to hide something as won’t supply all information and is asking that I specify exactly what information I want.
Surely a SAR would be a release of all data held no?

How did you define your SAR? It doesn't follow that you make a generic request and you get a data dump of any piece of info on you.

Current or recent employer, and a proper company as opposed to Bob's double glazing? No way would be one sheet. HR alone would be a bundle. Think about what you want and state it. e.g. all HR records, all notes made by manager and contact them again.
The process is that if you aren't happy you first complain to this employer, And if still not happy then complain to the ICO.

We’ve just gone through this (from the employer side) and our legal counsel reviewed everything that our IT/data controller found to ensure that only documents released to the employee met the explicit definition of what was requested in the SAR.
150 documents found; only 2 met the criteria of the SAR and were released. Employee is not happy (similar argument to yours OP). Truth is our legal counsel defined what could and should be released. Employee was expecting an open book, but that’s not what they requested on the SAR.
