Does anyone know the Torx screw size holding the wheel trim on ?

This is on the E34 M5 throwing stars

It's as Vixpy says. Thought a concise answer would suffice.

Depending on how long they've been in there, you may have to drill them out and re-tap them.

Of 3 sets I've had (2 x turbine & 1 x throwing star) one set of throwing stars needed drilling out.
