Sounds like you clutch hose has collapsed internally, common problem.

Assuming the slave and master are OK and the fluid is fresh then it's most likely air in the system.
The clutch is a right bugger to bleed properly on the E36 and also on the E34 where I had exactly the same symptoms as you.
There are certain techniques you can use for the removal of any remaining air from the system.
Basically unbolt the slave cylinder from the gearbox and rotate it so the bleed valve is upper most.
Attach a non return bleed pipe to the bleed valve (e.g. Ezibleed), it's not essential but it makes life easier.
Crack open the bleed valve and push the slave cylinder rod in so it pushes any air out of the bleed valve, remember to keep the valve upper most.
Tighten the valve, let the rod out and repeat until no air comes out.
The use of a pressure bleeder helps. Make sure the reservoir is topped up.

Bolt the slave cylinder back on then try the pedal.

If still not great pump it up and down 30 or 40 times and then repeat the above steps.

It took me a few goes but I got there in the end.
