Very simple point to start from.
Buy this months BMW magazines, read them and make a note of the names mentioned of who does good re-mapping. Cross reference with forums such as this and BMW specific forums. Also look for posts from owners who've had work done at these places.
You'll fairly quickly come to the conclusion that there are crap remappers and good ones and then the ones who are mentioned all the time for providing the best. The difference is pricing is quite narrow really, so you may as well go for the ones who are the best.
You'll hear of these names - CA Automotive, A-L Tuning and Advanced Auto Technik who are Sister companies, DMS, Evolve, and a guy called Simon at E-maps who will come out to visit you (pretty sure depending on where you live!)
The key to re-mapping is knowing from experience of which parameters to tune, to what extent and specific to the individual engine itself (amongst much more!) the lower end of the market will perhaps just increase the fuelling to give the 'performance' at the expense of leaving other affected parameters alone and outside of their effective operating scope. Those in the know, in conjuction with rolling roads and careful tweaking of many more parameters will extract the power and also extract better fuel economy as well.
I, as previously recommended, had my E39 530d Touring done by A-L Tuning and I really appreciated the advice and feedback and explanation given to me as I have a very very high mile car. It's this level of expertise you should look out for when speaking to re-mappers.
Assuming your car is standard, it's probably the later 3.0 Diesel engine which I think in standard form is either 193 or 204 BHP standard (I forget the torque figures) a high quality re-map will see that up to around 235-240 BHP, with better fuel economy and much better driveability due to a substantial gain in Torque delivery. In simple words, it'll put a very big smile on your face !

Nice new unit they are based in, right next door to Brystone BMW. Not exactly a 'broken down garage'

Jabbasport - loads of experience and a very good reputation. VW/Audi experts but been doing BMWs for a while now too.
