I purchased a 02 mx5 sport around 3 weeks ago from a small dealership, on Friday I had a few problems starting the car, it turned out that the immobiliser light wasn't coming on. After about 20 minutes and numerous tries it finally came on and i was able to start it. The problem seemed to go away over the weekend but this morning it did it again but after taking the key out and putting back in I was able to start it at the second attempt.

I've read a few horror stories about this problem and most of them the outcome is to replace the whole ECU and immobiliser.

My question is, do I take it back to the dealer now and say there is a problem, an intermittent one that probably won't appear when at the dealers, or leave it to see if it continues to occur?

I'd take it back just so that a complaint has been registered. At least that way you've got in early and have that as a fallback should you choose to see if you can resolve it yourself and find that you can't.

Having no mechanical/electrical experience is it even a probable that it's something that I can fix myself, or something I hope will happen at the dealership?

Give it back let them sort it , if you try to resolve it or have someone else do it they are likely to step away from responsibility. Theymust be given opportunity to rectify it .

Just had a flash back. Make sure that your battery terminals are connected properly. I had a loose one at one point and the car would only start intermittently.
