Best spec in what respect?
Depends entirely on what she likes.
A 2.5 Sport will give you 6 speed, lsd, which are geared more towards performance.
Sports have a black interior, i have had many people comment on thr interior of my Montana which is much lighter with tan leather, and 1/2 the dash being tan as well.
Some special editions give you AC, some have heated seats, some come with a hard top- you need to decide what is important.

I took it to mean "highest spec" in which case a Mk2.5 Sport will give you 6-speed, lsd, heated leather seats, electric windows & mirrors (heated mirrors from about 2003), fog-lights, additional chassis bracing, 16" alloys and I'm sure some other stuff I can't recall right now. A lot of Mk2.5 Sports have A/C too. Some special editions have some of that and some nice colours/interiors.Depends entirely on what she likes.

Make sure she test drives a Sport and an edition with standard suspension. The Sport has firmer Bilstein suspension and, at least in my experience, it does make a noticeable difference to the ride.
Once that decision is made it's just a case of working out what toys she wants - various different editions have LSDs, heated seats, aircon, leather seats, hardtops. There are some editions with a Bose stereo and additional speakers, but there are some comments on the internet that the Bose sounds worse than the standard stereo.
Some Mk2.5s have 16" wheels - replacement tyres are considerably more expensive compared to 15" wheels, something else to consider.
